Madrid Fusion 2024 starts this Monday with a program in which water management in restoration or “what is to come” in this sector they are two of its cornerstones, with the presence of more than 220 speakers, among whom are prominent chefs Latin Americans.
Until January 31, the 22nd edition of this event will feature Georgia as the guest country and Córdoba (Spain) as the guest city, with the motto “Where it all begins” because, according to its president, Benjamín Lana, this gastronomic event is the “starting point” dwhere many world-renowned chefs such as René Redzepi or the Brazilian Alex Atala began.
With six stages, Madrid Fusión will have more than 220 speakers, more than 200 stands, more than 2,500 congressmen and a business and institutional space of more than 25,000 square meters.
The presentations range from discovering the great secrets of food to improve haute cuisine to that of the Swiss chef Andreas Caminada or in which the Spanish Juanlu Fernández and the Colombian Dolce Nilda will give about the ‘best breakfast in the world’.
Among the twenty confirmed international chefs there are already the French Alexandre Mazzia, the Swiss Andreas Caminada, the Danish Nicolai Nørregaard, the Korean Junghyun Park, the Japanese Yasuhiro Tomari, the Argentine Gonzalo Aramburu, the American Mads Refslund, the Peruvian Gastón Acurio and Spaniards such as Dabiz Muñoz, Joan Roca, Andoni Aduriz, Ángel León, Dabiz Muñoz and Joan Roca.
Likewise, with more than 20 registered wineries from various countries, the event will once again have the ‘Madrid Fusio´n The Wine Edition Wines from Spain’ space.
This year, in addition, Madrid Fusión Foods from Spain grows with a space dedicated to spirits and cocktails, ‘Madrid Fusio´n Drinks’, which will feature high-level presentations starring, among others, El Celler de Can Roca, Mejorar, Angelita, Roberto Ruiz or Paradiso.
In addition, a new edition of ‘Madrid Fusio´n Pastry‘, the Pastry, Bakery, Chocolate and Coffee forum, with the presence of great figures such as Jordi Roca, Paco Torreblanca or Jordi Butrón.
It will also have a novelty, ‘Dreams #spainfoodtechnation’, a new space in collaboration with the state company ICEX España Exportación e Inversiones and the Alicia Foundation, an entity dedicated to technological innovation in cooking, the improvement of food and the appreciation of agri-food heritage.
