One of the products that Ecuador exports the most is bananas, but due to the current war situation, the banana export sector began buying part of the bananas from producers that could not be exported to the Russian and Ukrainian markets.

The measure is a consensus between both parties to prevent the fruit from going to other international destinations at a very low price and distorting the banana price market, in addition to alleviating the oversupply of fruit.

This oversupply of fruit is being offered locally, in markets and supermarkets.

The banana is a fruit rich in potassium, fiber, vitamin B6 and inulin, which can be used both in its green state and when it is ripe and reaches all its sweetness.

  • 1 white onion chopped
  • 1 teaspoon achiote
  • 3 cups vegetable broth

  • 1/2 cup angel hair noodles (optional)
  • 1/2 of milk

Preparation

Make a rehash with the white onion, salt and achiote.

You can add a vegetable broth (garlic, onion, pepper and carrot). Let the grated banana cook in this rehash. When the banana is cooked, the soup begins to thicken a bit, the noodles are added and then the milk. At the end, preferably ripe and creamy cheese is added.

  • 2 green bananas
  • 1 teaspoon achiote
  • 1/4 cup vegetable oil
  • 1 red onion
  • 2 cloves of garlic
  • 1 tomato
  • 1 sprig of coriander
  • salt, pepper, cumin
  • 1 can of tuna

Preparation

Grate the raw green bananas and reserve them with a cup of water.

Make a rehash with red onion, garlic, tomato and finely chopped coriander. Add the achiote, season with salt, pepper and cumin. In this i, over low heat cook the green banana mass and thicken. Halfway through cooking add the contents of the can of tuna with its oil, let it cook for a few minutes, stirring constantly to prevent the dough from sticking.

Serve with white rice.

When the banana is ripe, it can be eaten alone, or prepared as a purée to which a few drops of lemon can be added.

Ingredients

  • 1/2 pound of wheat flour
  • 2 teaspoons of baking powder
  • 150 grams of sugar
  • 1/4 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 cup of oil
  • 1 Teaspoon vanilla extract
  • 2 eggs
  • 3 large bananas
  • 1 teaspoon salt
  • 1/2 cup walnuts (optional)

Preparation

First, preheat the oven to 180° Celsius.

Then, in a deep bowl, combine the dry ingredients until well blended.

Next, peel the bananas and crumble them with a fork in the form of a puree.

Wet ingredients are added to that puree: eggs, oil and vanilla extract.

Add the dry ingredients. Optionally, you can add half a cup of chopped walnuts.

Grease and flour a mold, where to add the dough, which is baked for about 50 minutes.

Preparation

Cut the bananas in halves and then crosswise, that is, from each banana you get 4 portions.

Mix the milk with 1/2 teaspoon of salt, the egg and the flour. Stir well to form a very manageable dough. Introduce the bananas in the mixture so that they soak well.

Fry in hot oil and brown on both sides.

Also known as “hungry love”, “hidden love” or “cat locked up”, the drunk ones can also be tasted with ripe plantain, but they are more delicate with bananas.

Banana and strawberry ice cream

Ingredients

  • 2 ripe bananas
  • 12 strawberries
  • 1 cup plain Greek yogurt

Preparation

Peel the bananas, cut them into slices and take them to the freezer. In the same way with the sliced ​​strawberries. Let them freeze for a minimum of 5 hours, or overnight.

The next day place both fruits and 1 cup of natural Greek yogurt in the blender jar until they become creamy.

Optional, a splash of rum can be added to give the ice cream a deeper flavor.

Optionally, some stevia could be added, although the sweetness of the ripe banana and strawberry is enough. (F)
