Why Criterión, the restaurant of Colombian chef Jorge Rausch, is one of the best in Latin America

One of the characteristics of reality show master chef is that the contestants’ dishes are heavily judged by renowned chefs who own award-winning restaurants.

In the Ecuador edition for three consecutive seasons, the criteria of Carolina Sánchez, in charge of Ikaro’s kitchen, a Spanish restaurant that boasts nothing more and nothing less than a Michelin star; there is also the charismatic Jorge Rausch, Colombian chef who together with his brother Mark manages the Criterión restaurant.

The Criterión kitchen has been placed under the orders of those contestants that Rausch exclusively considers to have great talent and potential in gastronomy, regardless of their position in the program classification. And, of course, the honor of working in one of the best restaurants in Latin America and the world has only been extended to a lucky few.

Since 2013, Criterión has appeared on the list of 50 best restaurants in Latin Americawhich is updated every year by William Reed Business Media, which also publishes a ranking for Asia and a world ranking.

For his classic and innovative cuisineCriterión has held this title consecutively until 2016, and then again in 2021. The restaurant was founded in 2004 as one of the first in Colombia to offer a tasting menu and now offers two options, one focused on the classics and the other showcasing the best-selling dishes since the beginning of the restaurant.

With chef Jorge at the helm and his confectioner brother Mark in the desserts, William Reed’s publication highlights his innovative dishes such as smoked eggplant with sauce hoisin (bittersweet) of guava and the tartlet of Foie gras with chocolate and tamarind.

Lionfish feature prominently on the menu, as Jorge has long fought to promote the consumption of invasive species that pose a threat to the ocean ecosystem. The bright and elegant dining room is located in the Chapinero neighborhood, in Bogotá, and its prices range from $30 to $70.

On the Trip Advisor website, which provides travel-related reviews, travelers have rated the site 4.5/5 and out of approximately 1,100 reviews, around 500 rate it as excellent; for 190 is very good.

At least 3 participants from Masterchef Ecuador (Teleamazonas) were invited to work with the Rausch brothers at Criterión.

Daniella Alvear, fourth finalist of the second season, worked with them for 6 months, precisely in the pastry area, for 6 months. Chef Rausch’s proposal came to her after she was eliminated from the show. After spending half a year in the Colombian capital, Alvear planned to go to Panama in July, also to a Rausch restaurant, the amateur cook said in 2021.

In the following season, the last in fact, Jorge Rausch extended his invitation to Quito Matias Barriga, who was the ninth to be eliminated from the competition; and then to Guayaquil Klever Soliswho ranked seventh in that contest and was a crowd favorite.
