Potato pancakes used to be a staple food in monasteries. They became a cheap and easy-to-obtain substitute for bread. They were associated with poverty, but are now considered one of the greatest Polish delicacies. If you want to prepare them for dinner, you will need:
- 1 kg peeled potatoes,
- 2 eggs,
- One onion,
- A bunch of chives,
- 2 tablespoons of wheat flour,
- Spices: salt, pepper, sugar,
- Frying oil.
From the given ingredients you should get about 25 pieces of pancakes. Grate and squeeze out excess water. Add flour, eggs, spices, chopped chives and chopped onion. Mix everything thoroughly and spoon the pancakes onto the pan.
TIP! If you don’t want to grate potatoes, you can blend them in a blender or food processor.

Fry the pancakes on both sides until golden brown. Be careful not to burn them. It is best to flip them every three minutes, when they start to brown on the bottom. Although the entire instruction seems trivial, it may happen that the mass darkens during the preparation of the meal. This is a natural process that results from the oxidation of potatoes after grating. It does not change the taste or their nutritional value. If this bothers you, use Magda Gessler’s trick.
