Hazel is grown mainly for the edible seeds contained in hazelnuts. However, this is not its only advantage. Its flowers may be useful in the kitchen. It’s possible that you pass them on the street every day and you don’t even realize how valuable they are.

Hazel pollen occurs in early spring. This usually happens in February, but sometimes the first pollen can be noticed as early as January. It is not without reason that the hazel plant is called the hazel cat and catkins. It resembles a string of long, soft-to-touch beads. Few people know that it has useful properties. You can use it in the kitchen as a snack or prepare an infusion from it.

Common hazel grows wild in Poland, but Turkish hazel and southern hazel are also often cultivated. It blooms from February to the end of April. The tree flower is rich in nutrients because the pollen settling on it contains essential oils, flavonoids, salicylic acid and allantoin. Thanks to this, you can use it in the kitchen. After grinding and drying, it can be used as an addition to salads, soups and sauces.

The most popular dish that can be made from hazel flowers is . You will need 15 dag of hazel inflorescences, 15 dag of wholemeal flour, a pinch of salt and a little water. Separate the petals from the flower stalks. Add flour, salt and water to the flakes. Knead the dough into a hard dough and divide it into several parts. Roll each of them into a thin cake and place them on a baking tray lined with baking paper. Bake for 15 minutes at 220 degrees C.

Hazel flower infusion. You only need two ingredients

Supporters of natural medicine believe that hazel flower infusion has anti-inflammatory and antibacterial properties. To prepare it, you need to pour a handful of hazel flowers into a jug, pour boiling water over it, cover and leave for 10 minutes to infuse. Then just strain the mixture through a strainer. You can sweeten it with honey, quince juice or add a few drops of lemon juice to make the taste more expressive. Remember, however, that this can only aid the healing process. If you have a cold, you need to consult a doctor who will prescribe appropriate medicines.
