Golden maple leaves are a symbol of autumn. In Poland, we collect and admire them, but not everyone knows that maple leaves are considered a Japanese delicacy. How do the Japanese eat them?

The most popular variety of maple in Poland is the Norway maple, which can be found in forests and parks, but there are about 150 species of this tree in the world. The maple is undemanding and can grow up to 30 meters high. In Poland it is cultivated mainly for ornamental reasons, its leaves are considered a delicacy.

The Japanese eat the leaves deep fried. They are coated in tempura, which Japanese cuisine is famous for. Tempura is a characteristic dough consisting of flour and cool water. When it gained popularity in Japan, the country was cut off from the rest of the world, and contact was only possible thanks to merchants from Portugal and the Netherlands. It first appeared in the port city of Nagasaki in the 16th century and, contrary to popular opinion, tempura is not an invention of the Japanese, but of Portuguese merchants.

How to fry maple leaves? The temperature of the water when kneading the dough is important

Maple leaves are a snack worth trying. To prepare it, first make tempura. Remember to use well-chilled water to knead the dough so that it does not become rubbery. Mix a glass of corn flour and half a glass of wheat flour with water, add salt and sesame. Dip the collected and previously washed leaves in the dough and throw them into deep fat, the temperature of which should be about 170 degrees. Fry until the leaves are brown on both sides. We eat the leaves sweetly – with jam, maple syrup or honey.
