Organic lettuce salad with balsamic and honey dressing

Ingredients:

  • 1 cup fresh arugula leaves
  • 1 cup fresh purple spinach leaves
  • 1 cup of leaves baby kale fresh
  • 1 cup of leaves pak choy fresh
  • 1 fresh tomato peeled and cut into thin skins
  • 1 ripe avocado cut into thin skins
  • 1 small carrot grated
  • 1 breaded chicken breast
  • Balsamic and honey dressing
  • ¼ cup balsamic vinegar
  • ¼ cup maple syrup
  • ¼ cup olive oil
  • Salt and pepper to taste
  • 2 tablespoons of water

Preparation:

  1. You must have clean organic lettuce leaves. Wash and dry them, or put them in a lettuce spinner to remove the water. Arrange them in a pretty platter.
  2. Cut the tomato and arrange it on top of the lettuce. Do the same with the avocado and carrot.
  3. Cut the chicken breast in half, marinate it with your favorite seasoning and pass it first through flour, then through beaten egg and finally through breading. Fry it in a frying pan and cut it into cubes or long pieces. Arrange everything on top of the fresh vegetables.
  4. Prepare the dressing by placing all ingredients in a bowl and whisking vigorously to mix well. Check the flavor of your dressing.
  5. At serving time, drizzle dressing over salad and serve immediately.

Note: Makes approximately 4 to 6 servings.
