A restaurant critic and a chef from Tunisia talk about what couscous, shawarma and baguette have in common

On Wednesday, January 26, restaurant critic Tamara Ivanova-Isaeva, together with the chef and co-owner of the HOBZ artisan bread bakery, Tunisian Mahmoud Busselmi, will hold a tasting meeting “Maghrib: couscous, tagine , shawarma, shawarma, baguette – what do you have in common? The event will be held as part of the project “Kvartirnik”. The start is at 19:00.

What foreign cuisine is most popular in the Northern capital: Italian, Georgian, Chinese, Uzbek, Ukrainian, Japanese? Meanwhile, the answer to the question, if not visible from the window of any St. Petersburg apartment, is certainly “within walking distance” from it under the sign “Master Kebab”, “Chef Kebab”, “Halal” or simply “Shawarma”.

The Middle Eastern “shawarma” has practically supplanted – or, at least, competes on an equal footing with the “Russian fast food”, which were numerous patties and pasties. But the paradox is that this only confirms the status of St. Petersburg as a European capital, since tens – if not hundreds – of thousands of “dener kebabs”, “chef kebabs and shawarma-shawarma houses have long become a gastronomic reality in almost all European capitals.

Guests of Kvartirnik will learn about the peculiarities of Middle Eastern tastes, Muslim and European traditions of the Maghreb cuisine and why there is almost no couscous in St. Petersburg.
