Endocrinologist Ekaterina Young named the safest vegetable oils for frying. It turned out that not all oils can be used for this cooking option; some are only suitable for dressing salads and ready-made dishes.
According to the doctor, in general, vegetable oils are necessary for the body to obtain energy and nutrients to improve motility and reduce inflammation of the gastrointestinal mucosa.
The list of foods that cannot be fried with includes black cumin, walnut, pine nut, apricot kernel, olive, hemp, almond, hazelnut, and flaxseed oils. When heated, the listed types of oils smoke, oxidize and release free radicals, Young warned in her Telegram channel, adding that it is better to use them for dressing salads and ready-made dishes.
At the same time, you can fry food without harm to your health using oils with a high combustion temperature (from 120 to 180 degrees), consisting of saturated and monounsaturated fatty acids. The doctor allowed the use of coconut, refined olive oil, and avocado oil for frying.
In addition, the endocrinologist called for abandoning the use of sunflower, corn, sesame, peanut, soybean, pumpkin and mustard oils. Young explained that the first three types contain high amounts of Omega-6 fatty acids, which are pro-inflammatory agents.
