Cricket food will appear on the shelves of Russian stores

Soon you will be able to buy baked goods made from crickets in stores in Russia. The Izvestia newspaper writes about this.

According to media reports, crickets can become the main ingredient in the production of cookies, chocolates, pasta and other products.

It is noted that the products are already produced at enterprises in the Stavropol Territory and the Moscow Region.

According to the entrepreneurs quoted by the newspaper, a strict diet has been selected for the crickets – they only eat pumpkin, zucchini and corn. Flour is produced from insects, which contains up to 75 g of protein per 100 g of product; for comparison, ordinary flour contains from 2 to 5 g of protein. Cricket meal also contains more iron than beef liver.

Experiments are currently being carried out with confectionery products such as candy or chocolate bars. Baked goods, including bread, are also made from cricket flour.

Manufacturers explained that after heat treatment, frozen crickets are used to make cricket flour, which is added to the dough, but not more than 20%. It is noted that previously scientists conducted a number of studies, studied the consequences of using such a product and “not found a single indicator that could have a bad effect on the human body,” the publication writes.

However, problems are still possible, but if handled incorrectly, crickets can be dangerous to humans, causing allergies due to the high content of chitin in their skeleton. They may also contain worm larvae, warns chief food technologist Zinaida Rudenko.

The newspaper also notes that in Europe people have already been allowed to eat migratory locusts, and a law has also come into force according to which domestic crickets can be frozen, dried and consumed in powder form. The same law is being prepared for the larvae of the scavenger beetle and eight other species of insects.
