Ecuadorian judge at the Pan American Pizza Championship in Argentina

Mexico, the United States, Brazil, Chile, Colombia, Cuba, Uruguay, Peru, Paraguay, Haiti, Venezuela and Argentina form the group of countries that participate in the tenth Argentine Pizza and Empanada Championship and the second Pan-American Pizza Championship .

Ecuadorian chef Adrián Borja Arias is one of the almost 40 judges, journalists, chefs, cooks and local and international gastronomic references. Both events are organized by Apyce – entity that brings together all the pizzerias in Argentina. Both championships are held within the framework of II FITHEP Degusta 2022 at the Costa Salguero convention center, located in the Palermo neighborhood of Buenos Aires.

From 09:00 to 20:00, the contestants will prepare and cook the pizzas/empanadas in front of the public, using the ovens and utensils provided by the organization.

Borja studied gastronomy in Argentina 13 years ago and is a professor at La Escuela de los Chefs in Guayaquil. “I was also a chef at the Ecuadorian embassy in Buenos Aires; I was also a teacher at Apyce. The Pan American Pizza Championship is a very big annual event, but due to the pandemic it was not held for two years,” says the Ecuadorian through a phone call from Argentina.

Whoever wins the distinction of ‘Great Argentine Champion’ will be part of that country’s Apyce team at the 2023 World Pizza Championship, which will take place in Parma (Italy) representing Argentina. Prizes include more than one million Argentine pesos (more than $8,000) and prizes of sponsors.

“Here are 150 competitors who will make 575 participations”, says Borja, who points out that among the categories or styles -of a total of twelve- that are qualified, the most important are ‘greatest mass’, ‘acrobatics (free style), ‘Argentine pizza’, ‘Italian pizza’ and ‘gluten-free pizza’”.

In addition, in this gastronomic event, food fans will be able to taste and live the experience of the creations of the participants of the sixth national championship of Argentine artisanal ice cream, Latin American championship of artisanal ice cream, national championship of artisanal croissant of butter and artisanal croissant of fat , the national championship of Milanese and Genoese artisanal sweet bread, the national championship of master chocolatiers, the tronador cup, among other contests.

In Ecuador

With Santiago Granda, general director of La Escuela de los Chefs, they are planning to create a similar championship in Ecuador. “We want to see Ecuadorian participants in this type of championships. It is the first time that there is a judge from Ecuador and there has never been a participant from us. The idea is to replicate a championship like this in our country so that he can go to Argentina and then, why not, come out as a champion along with his team and go to the Pizza World Cup in Parma”, says Cuencan chef Adrián Borja enthusiastically.
