It’s an ideal idea for a quick and simple dinner for busy people, but not only. The recipe for lazy noodles is very simple. A small change in the classic recipe makes it even more fluffy and delicate.

Lazy noodles, also called lazy dumplings, deserve their name one hundred percent. They are distinguished by the most important ingredient – cottage cheese. And although it is simple, it is not difficult here to make a mistake, through which noodles, instead of delighting with lightness, will become hard as a stone or on the contrary, they will fall apart in a pot during cooking. How to avoid it and What to do to make them soft?

Fat or semi -fat cottage cheese is best suited for lazy. Skinny, especially not intention, can make it fall apart during kneading or cooking. However, this is not the only one to look for. Too much flour will make noodles hard. So it’s best to add it gradually while kneading the dough and control its consistency. What else to remember?

So that the dumplings do not break your teeth and were fluffy, it is worth watching the proportion of the ingredients and not overdoing with the amount of flour also for sprinkling during kneading. The brilliant trick is to add type 00 wheat flour, i.e. an Italian pizza product. It is finely ground and is also ideal for pasta. You can add it to classic flour or completely replace it in the recipe. It is also worth adding some butter to the dough, thanks to which he will gain even greater lightness.

Recipe for lazy noodles. This ingredient will change everything

What will you need for soft lazy? Below you will find a list of ingredients:

  • 500 g of semi -fat or greasy curd,
  • 2 medium -sized eggs,
  • approx. 100 g of wheat flour (preferably 450 – cake),
  • approx. 50 g of type 00 wheat flour (for pizza),
  • a pinch of salt (for whipping protein),
  • A spoon of butter (optional).

If you have time, start by compacting the protein foam and wiping cottage cheese or grinding in a machine. You can also crush it well with a fork. Insert a large pot of waterAnd when it is warm, add a little salt. What next?

  1. Add yolks and whipped protein foam (or beaten in a bowl) to a ground or crushed cottage cheese for a fork of cottage cheese). Also add soft or melted butter. Stir.
  2. Gradually add flour (mix 450 and 00 in a separate bowl) while kneading the dough. When it stops sticking, form a few balls so that it is easier to form noodles.
  3. Form a roller from each ball and cut it into small noodles.
  4. Put in parties in a pot of water and cook in boiling water until they flow out.

Serve with melted butter, breadcrumbs or sugar.
