Many of them reveal to add a bit of spirit to the dough, but not to add “power” to your own.

Everyone does donuts in their own way. Fried or baked, with rose filling, marmalade, chocolate, with icing or sprinkled with powdered sugar. However, one feature probably appears in most home recipes. Why does the donut recipe often contain the addition of spirit or other strong alcohol? This was explained by a confectioner and food technology.

Why add spirit to donuts? Explains the food technologist

– A bit of spirit will make the donuts not soak the fat during frying! Who has not heard such a advice from his mother, grandmother or aunt? Is this good advice real? – Ada Lal, known to fans of sweets as Ptiszu. Everything was explained by the food technology Marta Szumiata. – alcohol evaporates faster than water, because already at 78 degrees C. Therefore, a thin shell will form on the surface of the donuts, such a barrier that will limit fat absorption by the dough she said. So it looks like grandmothers were really right.

However, it turns out that these are not the only pros of adding alcohol to donuts. The expert raised several of them:

  1. The frying process will last shorter and the donuts will be more crunchy.
  2. Ethanol is an obstacle to creating gluten, so the dough will be more delicate.
  3. Adding alcohol reduces the risk of too strong dough, specifically gluten mesh, which results in hard donuts.

It is worth remembering that if we want to add alcohol to donuts, we do it in a small amount. A spoon of spirit or lack of it will not have such a large impact on the end result.

In addition,, contrary to popular beliefs, Alcohol does not completely evaporate when thermal treatment. So if we have small children or for other reasons we limit or give up alcohol, it is better not to add it to food.
