Cucumber soup is one of the most popular Polish soups. It tastes delicious, is slightly sour and nutritious. It is most often prepared with potatoes, but this time replace them with another addition. It will come out even better.

Every housewife has her own recipe for cucumber soup. Depending on the house, it is made in a slightly different way, but there are ingredients that must always be in it, such as potatoes. Few people know, however, that you can prepare this dish without this ingredient. What can you replace it with?

This is a great idea for a quick and filling dinner, especially in the summer when you don’t feel like eating fatty foods or meat. Cucumber soup from this recipe will be delicious, and even a novice cook can handle its preparation.

The standard recipe for cucumber soup includes diced cucumber, but many people find this dish too heavy. There is a way to fix it. Instead of potatoes, add rice to the soup. This will make the dish lighter and perfect for hot days.

How to make cucumber soup with rice? It’s so easy. It will disappear from the plates in no time.

To prepare a delicious cucumber soup with rice you will need:

  • 500 g pickled cucumbers or puree,
  • turkey thigh with bone,
  • parsley,
  • three carrots,
  • onions,
  • parsley,
  • dill,
  • sour cream 18%,
  • rice,
  • spices: bay leaves, allspice, salt and pepper.

Pour two liters of water into a pot, add the turkey thigh, allspice and bay leaves. Cook for about 1.5-2 hours, then add grated carrots, parsley and onion roasted on the fire. Cook for another half an hour, after which add grated cucumbers or puree, season with salt and pepper. Temper the soup with cream – pour a little broth into a bowl and add two tablespoons of cream, mix and pour into the pot. Serve with chopped parsley, dill and rice.
