The secret to a perfect sponge cake is to add a little bit to the mixture. Thanks to it, the cake will not fall and will come out as light as a cloud. We can add rum, whiskey, liqueur, vodka or spirit. However, if you don’t have high-proof alcohol at hand, apple cider vinegar will also work well.
How to make the perfect sponge cake? This recipe is very simple. Even a novice chef can handle it
For we need:
- 6 eggs, size L,
- a glass of cake,
- a glass of sugar,
- half a cup of potato flour,
- a pinch of salt,
- half a teaspoon of baking powder,
- a teaspoon of alcohol.
Before we start preparing the dough, take out all the products well in advance so that they are at room temperature. We separate the whites from the yolks. Whip the egg whites with sugar and salt, and mix the yolks with alcohol and baking powder. Add the yolks to the beaten egg whites and mix until the mixture has a uniform consistency, then add both flours. Pour the mixture into a greased cake tin, remembering not to grease the sides as the dough will “climb” along the edges. Bake for 35 minutes in an oven preheated to 180 degrees.
