Cucumber season is fast approaching, and with it, it’s time for preserves! This year, choose this original recipe and I guarantee you that the whole family will happily eat your cucumbers.

Although there are countless ways to prepare cucumbers in Poland, each of us has our favorite. Starting from the healthiest ones, i.e. pickled ones, through those with little salt, and ending with canned ones. I recently made the latter in a new version and I admit that they have become a real hit in my house!

Pickled cucumbers are a popular snack and addition to dishes. They are characterized by an acidic taste and a crunchy consistency, and they also have many health properties. They are rich in vitamins and minerals such as vitamin K, potassium, magnesium and manganese and contain fiber, which aids digestion and regulates blood sugar levels. Additionally, they are a great antioxidant and due to their high water content, they keep our body hydrated. They also have anti-inflammatory properties and support the immune system.

The season for canning cucumbers usually falls in summer, when they are fully ripe and available on the market. The best time to preserve them is July and August when the cucumbers are juicy and crunchy, but with a little luck you can start making them today!

If the above benefits of eating pickled cucumbers haven’t convinced you yet, this recipe definitely will! They are so good I can eat the whole jar in one sitting. These are Mexican-style pickled cucumbers with a little twist, and here’s how to make them:

1 kg of cucumbers

2 onions

3 cloves of garlic

2 chili peppers or ground cayenne pepper

1 tablespoon of salt

1 teaspoon of sugar

2 tablespoons of vinegar

1 tablespoon of mustard seeds

1 teaspoon of cumin

1 teaspoon of coriander seeds

1 teaspoon of oregano

and a special ingredient, half a teaspoon of coriander seeds, which will add a mega oriental flavor!

A method of preparing:

Wash the cucumbers, peel the bark, cut them in half and remove the seeds. Cut into slices. Peel the onion and garlic and cut into thin slices. Cut the chili peppers in half, remove the seeds and cut into thin slices. Then transfer all ingredients to a large bowl and mix thoroughly. You can put this mixture into jars.
