Warmer and longer days make us much more willing to spend time outside. Family meetings and parties with friends move to gardens and plots. On such an occasion, of course, there must be a barbecue filled with delicacies. There is probably nothing tastier than dishes prepared over fire. Of course, sausage is the most popular among them, but we also like to eat chicken, various vegetables and even fish. You can’t forget about the neck. Unfortunately, its preparation can be problematic, and if done incorrectly, the meat becomes tasteless and chews endlessly. How to prepare pork neck so that it delights with its taste?
How to make a good marinade for pork neck? Go for a sweet and spicy flavor
Even before the pork neck lands on the grill, it must be properly prepared. Since it doesn’t have any particular flavor on its own, you need to use an appropriate, intense marinade. In a bowl, mix together:
- 4 tablespoons of slightly spicy mustard (e.g. sarepska),
- 2-3 tablespoons of good honey,
- 2 cloves of pressed garlic,
- salt and pepper,
- favorite spices, we recommend smoked paprika, some hot pepper and thyme or rosemary,
- olive oil,
- optional: finely chopped onion.
When buying pork neck, try to choose relatively lean and not overgrown meat. At home, cut them into cutlets and gently pound them until they are about 1 cm thick. Then thoroughly rub each piece with the marinade on both sides and place it in a previously used bowl, cover with foil and refrigerate for at least a few hours, although it is best to start preparing it even a day in advance. Thanks to this, you can be sure that the taste of the marinade will be truly distinctive.

How to make the pork neck soft and juicy when grilled? Time is important
Even the best marinated ones will taste like sole if you grill them incorrectly. Many people keep it on the grill for too long, which causes it to lose its juiciness and tenderness, and instead becomes hard, dry, stringy and difficult to swallow. Slices of meat about 1 centimeter thick should be grilled briefly but thoroughly, usually no longer than 10 minutes (1:10 rule). If you like a charred “skin”, roast it directly on the fire for 1-2 minutes, which will make it nicely brown and crispy. Use the remaining time for slow baking. Throughout this time, check that it does not burn and raise the grate slightly if necessary. Also, don’t forget to turn it regularly.
