What are grapeshot? They are also called cepelins
Kartacze are also called cepelins. They are very popular in Podlasie, Warmia and Masuria, as well as in the Suwałki region. In Lithuania, it is considered a national dish. Kartacze are oval-shaped dumplings, usually consisting of starch. There is usually a meat stuffing inside. Depending on the region and preference, they can be served with cracklings, bacon, onion or your favorite sauces. How to make them?
What to make grapeshot from? Preparing the dish is simple, but requires some patience
According to the website, kartacze are usually served with meat stuffing, but if you want, you can replace this ingredient with, for example, stuffing of your favorite mushrooms with onion or other additions. What will you need for standard grapeshot machines?
Ingredients:
- 3 kg of type C potatoes;
- about 4 tablespoons of potato starch;
- 0.5 kg of minced meat;
- 3 onions;
- half a kg of lard or smoked bacon;
- oil;
- spices: salt, pepper, oregano, marjoram.
A method of preparing:
- Peel and wash the potatoes. Boil 1/3 of them in salted water, and after draining, wait until they cool down. When this happens, press them through the press.
- Grind or grate the remaining raw potatoes and pour out excess water. Add the raw potatoes to the cooked ones, then pour the starch into the bowl. Season with salt and make sure that the mixture will be able to form dumplings.
- Season the minced meat with herbs, salt and pepper, and then place it in the form of balls onto the potato mass. Then form the grapeshot.
- Boil the grapeshot in salted water for about 15 minutes.
- Serve with onion and bacon fried in oil or bacon cracklings (fry them over low heat so they don’t burn).
