Sauerkraut is rich in many valuable ingredients, such as vitamins A and C and potassium. Many people like to eat it straight from the bucket. You can use it to prepare many tasty dishes, such as cabbage soup or bigos. Before Christmas, we use it to make stuffing to fill dumplings, patties and croquettes.
How long should you cook sauerkraut to make it soft? What to do if it is too sour?
Do you have dumplings with cabbage and mushrooms on your list of Christmas dishes? Before you prepare the stuffing, you need to cook the sauerkraut until soft. This way you will emphasize its flavor and ensure that it combines perfectly with the other ingredients.
Add the cabbage to lightly salted, boiling water. Cook over low heat for 20 minutes. After cooking, strain the cabbage, let it cool and add it to the stuffing. If you are afraid that it will be too sour, rinse it under running water before adding it to the pot or mix it with fresh, shredded cabbage.

The best sauerkraut cooked for dinner. For the holidays and beyond
Boiled cabbage often appears on our tables in winter, especially during the holiday season. If you want to prepare it as an addition to dinner, prepare:
- 0.5 kg of sauerkraut,
- 1 large onion,
- 2 bay leaves,
- 4 grains of allspice,
- 1/4 cup of water,
- Spices: marjoram, salt, pepper.
Peel the onion, chop it into cubes and fry in oil. Transfer to a pot, add cabbage, water, bay leaves and allspice. Cook until soft over low heat. At the end of cooking, add spices and mix thoroughly. I add a teaspoon of each, but it all depends on your preferences.
