She would run “Kitchen Revolutions” today. In the 19th century, she was a culinary celebrity

Lucyna Æwierczakiewiczowa was the culinary queen of the 19th century. In those days, everyone knew her recipes, and she herself was famous for her sharp tongue and rude manner. Who was the first culinary celebrity of Warsaw?

Lucyna Ćwierczakiewiczowa was the author of culinary books and home guides. She received a large salary for her publications, and her high earnings became the subject of columns in Warsaw magazines. The number of books exceeded even editions of works by Mickiewicz and Słowacki. Ćwierczakiewiczowa lived 75 years. She died in February 1901 in Warsaw.

Lucyna was said to be the first in Warsaw. One of her books, “365 dinners for 5 zlotys”, went through over 20 editions. The author was go-getting, famous for her sharp language, and her statements aroused controversy. Her exchange with Eliza Orzeszkowa went down in history. – So you write about pancakes? – Orzeszkowa. – And you, under the pancakes – replied Ćwierczakiewiczowa. Lucina Ćwierczakiewiczowa was so fat that she walked up the stairs backwards, because her large breasts and belly prevented her from moving normally. When she couldn’t go up the stairs any more, she ordered her to be carried to the theater auditorium on a chair.

She was the mother of Polish cuisine. It was adored by Bolesław Prus himself

The list in Ćwierczakiewiczowa’s book includes such dishes as zrazy (rolled roulades), chicken with cucumber salad, white borscht or barley soup with groats. So it is typical Polish cuisine. The author proposes dishes for various occasions, and the recipes are sorted by seasons. He was one of her supporters Boleslaw Pruswho about her: “The following qualifications are needed for the sacrament of marriage: age of majority, free and unconstrained will and ‘365 dinners for 5 zlotys’ by Ćwierczakiewiczowa”. To this day, people eagerly use Ćwierczakiewiczowa’s recipes and have her original recipe books at home.

During her visits to the theatre, Ćwierczakiewiczowa ate chocolates and loudly commented on the actors’ performances. She became famous not only for her cut retort, but also for her entrepreneurship. As Prus wrote: “What Mickiewicz did not dream of with us, Ms. Ćwierczakiewicz achieved”. Without a doubt, she was a real culinary genius, and her recipes will be present in our kitchen for many years to come.
