Christmas desserts: ‘The English pudding’ by Luz

What yesterday was a distraction to forget the bad times, today is a venture that is growing little by little and with love.

Below, Recetas de Luz shares the recipe for this dessert, which it describes as low in sugar but high in flavors and softness.

Ingredients:

  • 200 grams of flour
  • 150 grams of butter
  • 150 grams of sugar
  • 3 eggs at room temperature
  • 1 tsp baking powder
  • 1 tsp honey
  • 1 tsp vanilla essence
  • Lemon zest
  • 1 pinch of salt
  • 125 gr candied fruit (50gr of this quantity is left to decorate)
  • 150 gr of nuts
  • Grape Easter mix (50 gr are for decoration)
  • 10 cherries to decorate

For the glaze:

  • 1 egg white
  • 1 lemon juice
  • 250g of powdered sugar

Preparation:

All food must be at room temperature. It is important that butter and eggs are too. The first thing to do is preheat the oven to 180 degrees (this is the recommendation but it varies depending on the oven). Then place in a bowl the butter and beat it a little, while incorporating the sugar until it has a white creamy texture. To this add the eggs one by one, without stopping beating, then add the essence of vanilla, orange zest and honey.

Now sift the flour (sift it), the baking powder and the salt, and incorporate with the help of a spatula with enveloping movements.

In a separate bowl, mix the ingredients: nuts, glazed fruit, raisins or, failing that, blueberries. Incorporate the fruits into the preparation.

Place everything in a mold that previously has to have butter around it, with baking paper. With the oven already preheated, it is introduced and left at 180 degrees, approximately for 30 to 45 minutes. (depends on the oven(.

The oven must be turned on and checking if it is already doing its cooking process. You can go checking and inserting a knife and once it comes out clean it means that it is already cooked.

Remove from the oven, let cool to room temperature and unmold. Place the glaze over the pudding and the other nuts.
