Recipe and ingredients for the Christmas stuffing that accompanies the turkey

The stuffing accompanies the turkey, but it is not usually stuffed for the bird on Ecuadorian tables. Its characteristic sweetness together with dried fruits gives it a special place in Christmas celebrations.

Stuffed turkey with ground beef and pork

Ingredients

  • 1 pound ground pork
  • 1 pound ground beef
  • 4 ounces of walnuts
  • 8 ounces stuffed olives
  • 4 ounces of raisins
  • 4 ounces of prunes
  • 2 cups of red wine
  • 4 ounces of sugar
  • 3 breads soaked in two cups of milk
  • 1 diced pearl onion
  • 2 minced garlic seeds
  • Salt and pepper to taste.

Preparation

Sauté the pearl onion, garlic, salt and pepper. Then add the beef and pork meats and cook for about 15 minutes. Add sugar, raisins, olives, nuts, wine and cook for ten more minutes. Finally put the bread soaked in milk and cook for another five minutes. Rectify the flavors.

Stuffed turkey with chicken

  • 1 chicken cooked and shredded
  • 2 cups of chopped white onion
  • 1 cup chopped bell peppers
  • 6 sweet breads soaked in wine
  • Oil
  • Garlic, salt, cumin
  • 1/2 cup of Chinese sauce
  • 1 bottle of red wine
  • 4 cups of chicken broth
  • 1 cup of sugar
  • 1 cup of raisins
  • 1 cup of prunes
  • 2 cups of walnuts
  • 1 cup of olives
  • 1/2 pound diced ham
  • 6 hard-boiled eggs

Preparation

In a large pot, fry the chopped white onion and pepper in oil, add garlic, salt, cumin and the Chinese sauce.

When well refried, add 1 cup of wine and 2 cups of bouillon. Then add the previously soaked and shredded bread, then the cooked and shredded chicken. Let cook over low heat stirring constantly for 10 minutes. This thickens, if you want it looser you can increase the broth and wine.

Then add the ham, raisins, prunes, sugar and check the taste. At the end increase the nuts, olives and chopped eggs. (F)
