More than 9 million artisanal panettones will be sold during the 2023 Christmas season, estimated Pío Pantoja, who leads the Association of Bakers (Aspan): “This year, the artisanal Mypes bakers hope to sell approximately 9 million nationwide out of a total of 6,000 bakers, taking into account that in Peru there are 20,000 bakeries”.

The president of the Association of Bakers (Aspan), Pío Pantoja, pointed out that in 2023 it is taking a while for the sale of artisanal panettone to take off, since they do not have advertising like “large industries do.”
“Making panettone and selling them is no longer a business, That’s why out of 20,000 bakeries only 6,000 produce it.. Fortunately, the population and the public are looking for a more artisanal, healthier panettone, with fewer additives, such as preservatives, conditions that an artisanal panettone has,” adds Pantoja.
Can the price of panettone go down?
Due to the economic crisis, many families cannot afford a panettone. In the market we can find various prices, but the president of Aspan details what some brands are doing.
“The price of panettone is almost impossible to drop compared to the previous year. What the big industry has done is reduce the weight, which was always 1,000 grams; now we are at 700 grams. If we continue like this, soon the panettone will weigh only 100 grams,” explains Pantoja.
The specialist points out that the sale and production of panettone focuses on the capitals of the coast and a bit of the mountains, because the latter region generally only buys and does not produce, just like the jungle.
