To detect if a ceviche has been prepared with acetic acid, La República spoke with chef Jesús Aguilar, who revealed the main characteristics of an adulterated ceviche dish.
“The first thing that is recognized in a ceviche adulterated with chemical substances, such as acetic acid, is the flavor. We as Peruvians are accustomed since childhood to that juicy flavor of lemon, since it is the main ingredient in many national dishes. From the palate, we can realize what type of ceviche we are eating,” commented the businessman.
Aguilar also pointed out that flavor is not the only factor that helps recognize if Peru’s flag plant has been adulterated. “Flavor is the main indicator when a ceviche has been adulterated. However, there is another characteristic to identify it, such as color. Well-prepared ceviche has a light color. If we see that the dish has a dark color, it would be advisable not to eat it because it could have chemical inputs,” he explained.
