The truth is that it is very easy and it is one of those delicacies that are prepared in the kitchen and always end, everyone wants more, children and adults. And if you don’t believe me, then prepare them, arrange them in a nice fountain and you will see them disappear. Don’t be surprised if people come into the kitchen to ask if there are still fritters. My suggestion would be to prepare double recipe.

Wind fritters with honey
Ingredients:
- 1 cup of water
- 2 teaspoons of butter
- 1 teaspoon salt
- 1 cup of flour
- 3 eggs
- ½ teaspoon baking powder
- ½ cup grated Swiss cheese (optional)
- 1 cup of oil for frying
- 2 or 3 tablespoons powdered sugar for dusting
- Maple syrup to accompany
Preparation:
- In a non-stick pot, heat the water with the butter and salt, when it comes to a boil, add the sifted flour all at once and stir strongly with a wooden spoon. Cook over low heat for about four minutes until it forms into a ball. Let the dough cool.
- When the dough is cold, add the eggs one by one, beating well after each egg. Add the baking powder and add the cup of Swiss cheese. (If you use cheese it has a better flavor, although in the classic recipe they omit the cheese).
- In a saucepan, heat the oil well and fry the fritters, dropping the dough by spoonfuls. Cook until they are well browned and remove them on an absorbent paper.
- When serving, sprinkle abundantly with powdered sugar and serve accompanied by maple syrup or your favorite honey.
Note: Makes 25 to 30 fritters.
