Happy Mother’s Day: Recipe to prepare the ‘mother’s rice’

Dear readers, reflecting on Mother’s Day, such a special day for everyone and what the mother means in the family, I decided to prepare rice, our basic food, which can be mixed with different ingredients, the ones we have in our house. and that, when put together, they give us the most delicious smells and flavors, according to the tastes and loves of the family. Who hasn’t been fed rice? Everyone I know, mostly.

I prepared five different rice dishes. When I put them in a mold for the presentation something went wrong and the ones with corn and peas began to fall apart; the mold I had in mind failed. So, I mixed all the rice and molded it again to finish decorating it with the straw chips. You can see the result: a “mother’s rice”.

This is how mother’s rice is prepared

To make this rice, mix all the rices I describe below, but use two cups of the fried straw chips inside the rice and separate three cups of the straw chips for decoration.

rice with ham

Ingredients:

  • ½ cup of pearl onion cut into strips
  • ½ cup green bell pepper cut into strips
  • 1 tablespoon butter
  • ¼ cup of white wine
  • 1 tablespoon of mustard
  • 1 cup of ham cut into small squares
  • 1 teaspoon vegetable seasoning
  • ½ cup of water or chicken broth
  • Salt and pepper to taste
  • 1 ½ cups of cooked rice
  • 1 cup of potato chips

Preparation:

  1. In a frying pan, put the tablespoon of butter with the pearl onion and pepper to fry for a while; add the white wine, ham, seasoning and water or broth. Let cook for a while so that the flavors mix well and check the point of salt and pepper. Remove from heat and have it ready.
  2. At the moment of serving, mix the refried ham with the rice and decorate it with the fried straw potatoes.

Note: Makes approximately 4 servings. You can prepare it to serve it separately.

rice with mushrooms

Ingredients:

  • ½ cup chopped white onion
  • 1 tablespoon butter
  • ½ cup white wine or sherry
  • 1 ½ cup sliced ​​mushrooms
  • 1 teaspoon vegetable seasoning (or use your favorite)
  • ½ cup of heavy cream
  • Salt and pepper to taste
  • 1 ½ cups of cooked rice
  • 1 cup of potato chips

Preparation:

  1. In a frying pan, put the tablespoon of butter with the white onion and fry for a little while; add white wine, mushrooms and seasoning. Let the mushrooms cook until they release their water. Add the heavy cream with a touch of salt and pepper. Check the flavor and have it ready.
  2. At the time of serving, mix the cooked rice with the mushrooms and decorate with the fried straw potatoes.

Chicken rice

Ingredients:

  • ½ cup of pearl onion cut into strips
  • ½ cup green bell pepper cut into strips
  • 1 tablespoon butter
  • ½ cup of white wine
  • 1 ½ cups cooked and shredded chicken
  • 1 cup of the consommé where the chicken was cooked
  • ½ cup tomato sauce
  • 1 teaspoon chicken seasoning
  • Salt and pepper to taste
  • 1 ½ cups of cooked rice
  • 1 cup of potato chips

Preparation:

  1. In a skillet, put the tablespoon of butter with the pearl onion and green pepper. Sauté for a while and add the white wine, chicken, broth, tomato sauce and seasoning. Let cook so the flavors blend well. Check your point of salt and pepper. Have it ready.
  2. At the moment of serving, mix the rice with the chicken and decorate it with the fried straw potatoes.

Rice with peas and carrots

Ingredients:

  • ½ cup finely chopped white onion
  • 1 tablespoon butter
  • ½ cup of white wine
  • 1 teaspoon herb seasoning
  • 1 cup of cooked peas
  • 1 cup grated carrot
  • 1 cup of water or chicken broth
  • Salt and pepper to taste
  • 1 ½ cups of cooked rice
  • 1 cup of potato chips

Preparation:

  1. In a frying pan, put the tablespoon of butter with the white onion and fry for a little while. Add the white wine, herb seasoning, peas, carrot and water or broth. Cook for a little while to mix the flavors. Check your point of salt and pepper and have it ready.
  2. At the moment of serving, mix with the white rice and decorate with the fried straw potatoes.

Rice with corn and parsley

Ingredients:

  • 1 cup of cooked corn (can be canned)
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 ½ cups of cooked rice
  • 1 cup of potato chips

Preparation:

  1. At the moment of serving, mix the corn with the olive oil, chopped parsley and cooked rice. Serve and decorate with the fried straw potatoes.

Fried Straw Potatoes

To make the fried straw potatoes, you must grate the potatoes and fry them in very hot oil. When they are golden, remove them and put them on absorbent paper. Add a touch of salt. Have them ready.
