The harvest of the so-called flower of salt, the product gourmet offered by Ecuasal, occurs during sunny days when the water evaporates leaving salt crystals floating on the surface. These are collected manually (from the lagoons located in the province of Santa Elena) before reaching the bottom through a 100% natural and artisanal process.
This is indicated by one of the post on Instagram from @aurasalts. “These small crystals are what we call fleur de sel, which are then collected manually,” indicates the brand’s published messages.
Daniela Arbeláez, head of Marketing at Ecuasal, indicates that the difference with traditional sea salt is centered on the category of salts to finish, so it is applied at the end when the dish is already prepared. “It is not used in the cooking process of a dish but at the end and the difference is that the fleur de sel is 100% natural, it does not have any additives and its process is completely handmade, it is harvested in small quantities. It is precisely the layer that is above the pools, so it must be collected in a special way so that it does not sink to the bottom”.

The harvest depends on the weather, since if it rains this layer is dispersed and cannot be harvested. “Weather conditions must be optimal. It has to be very hot and sunny.”
Another difference is in its flavor since it has less sodium and has a crunchier texture. It does not specifically contain iodine and fluorine, which traditional sea salt must contain by law, indicates Arbeláez.
Ecuasal ventured into the gourmet line of salts and offers this product as of 2016. The origin of this way of extracting salt arose in the Atlantic and Mediterranean coastal areas of France.
