The most famous oyster recipe in the world is the Rockefeller oyster and in Chanduy (province of Santa Elena) they grow it, so I have prepared it today with this wonderful ingredient. They are a luxury appetizer or a starter. I tell you that I have used a classic recipe, although in the world and according to the place, you can put cream or Parmesan cheese on them, but I leave those options to your liking. You can’t imagine the freshness, you can also eat them raw with a touch of lemon and Worcestershire sauce, a delight.

Rockefeller oysters
- 12 medium oysters
- 2 butter spoons
- ½ cup finely chopped white onion
- ½ cup of white wine
- 3 cups fresh spinach, cleaned and finely chopped
- 2 tablespoons chopped fresh parsley
- 1 teaspoon herb seasoning
- 1 teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
- ¼ breading
Preparation:
- Open your oysters and put them in a baking tin.
- In a frying pan put the butter with the white onion and fry until transparent.
- Add white wine, chopped fresh spinach and chopped fresh parsley, season with herb seasoning, salt and pepper and cook until dry and refried consistency. Check the taste.
- Spoon a tablespoon and a half to two tablespoons of the spinach over each oyster, then sprinkle with the breading.
- Bake at 350º F or 175º C for 25 to 30 minutes until golden brown and just beginning to boil.
- Serve immediately, piping hot with the classic garnish of lemon wedges.
Note: Serves 2 servings. You can double or triple the recipe.
