Well, that is the case of this versatile soup that I have prepared today with shrimp, although it can also be made with fried fish and it occurs to me that with any shellfish. You decide with your creativity what to season it with, what cannot be missing is cheese and avocado to turn it into a classic recipe, very appropriate for Lent. They will love it.

Shrimp soup
Ingredients:
- 1 cup finely chopped white onion
- 2 tablespoons of achiote oil
- 4 cups of potato cut into medium squares
- 4 cups of water
- 1 teaspoon salt or to taste
- ¼ teaspoon pepper or to taste
- 2 cups of cleaned shrimp
- 1 teaspoon seasoning (use your favorite)
- ½ cup of milk
- 1 cup of fresh white cheese cut into squares
- 2 ripe avocados to accompany
Preparation:
- In a medium pot, put the white onion and the achiote oil to fry, when it is transparent add the potatoes and fry for 2 minutes, add the water and cover the pot so that it reaches its boiling point, then uncover the pot and stir with a wooden spoon.
- Have control over your potatoes, let them cook and when they are soft, mash a few so that the soup has its creamy consistency. Don’t let them all fall apart. At this point you can remove your soup from the heat and resume cooking the moment you are going to serve it.
- When it’s time to serve, put your soup on the stove and when it comes to a boil, add the cleaned and marinated shrimp with your favorite seasoning. Let cook about 6 minutes until they are ready.
- Add the milk and fresh cheese, let stand 2 minutes and check its flavor. If it seems too thick, you can add a half cup of water. Serve immediately, piping hot.
- Clean the avocados and cut them into skins or fine squares to decorate and accompany your shrimp chupe.
