Purple laundry festival will be held this Saturday 23 in Sigchos

It will take place in the Quinticusig community of that Cotopaxense canton.

Colada morada, wines and desserts made from mortiño that is grown in the moors can be tasted during the first Sigchense National Laundry Festival, which will take place from 09:00 this Saturday 23 in the community of Quinticusig, of the Sigchos canton, in the province of Cotopaxi.

With the advice of chefs from the Autonomous University of the Andes (Uniandes), gastronomic alternatives based on guinea pig were also prepared, such as medallions and roasts of that typical animal of the region.

Kléver Casillas, organizer of the festival, stressed that the purple laundry will be made with processed flour from the pumpkin, a product that is also grown in the Sigchos moors.

Casillas commented that they are executing a pilot plan for the reforestation of the mountains in the area with mortiños bushes and that in order to boost the economy of the community members they found alternatives to take advantage of the fruit the rest of the year, such as in the preparation of wines such as El Last Inca and Andean Pearl. Previously, this fruit was only used once a year in the elaboration of purple laundry in finados.

He stated that they also wanted to take advantage of the pumpkin cultivation so that it is not only marketed in greater quantity at Easter for the preparation of the fanesca, so the alternative of processing it into flour throughout the year was sought. (I)
