The most famous “rebotologist” in Ecuador, as Jorge Rausch used to call her, said goodbye to the program preparing a Risotto to the boiler, whose rice did not finish cooking completely; however, it was particularly striking that during its preparation Alberta mentioned her admiration for her mother, from whom she inherited her passion and talent for cooking.
And who is his mom? well it’s called Isabel Perez Cereceda, a Guayaquil native who for so many years was so successful in the gastronomy business, in which she worked for more than 40 years, that EL UNIVERSO Magazine visited her in March 2015 at the restaurant she then owned in the Olón spa ( province of Santa Elena), called The Calderada (the Alberta dish was a version prepared by that place).
On that occasion, Isabel admitted that from a very young age she had been very clear about her vocation. “I was born a cook”, He said. The first time she prepared something to eat, she was only about five years old, and it was a singular delight for her dad.
It happened in the vacation home that his family had in Salinas, which was still under construction. As it did? She took some small pieces of wood from the floor, which looked like crackers, and put wet sand in between them.
“I told my dad, ‘Here, it’s a sandwich.’ And he took it to his mouth to bite it. I wanted to die. It was wood and sand! He bit into it and told me: ‘It’s delicious, mijita’. He always supported me in my vocation”, recalled this lady with six children (five women and one man), who then and today continues to reside in tall mangrove, but no longer has a restaurant.
It was precisely in Manglaralto where, in 2010, was visited by chef and TV celebrity Anthony Bourdain (1956-2018), because his restaurant had been chosen to record one of the segments of his program No reservations (No reservations, Travel Channel).
“The guy is charming, a thin back with blue eyes, towering; he ate a calderada and a colonche”, he indicated about that experience that brought international fame to his restaurant. The calderada is a delicious soup full of seafood and thickened with bread blended in beer. This is Isabel’s very particular version of a Portuguese stew called caldeirada. “But my dish is unique, no one else prepares it,” he said proudly. This is how Bourdain ended up falling in love with Isabel, whom he refers to in that chapter when he says this lady is impressive (this lady is impressive), for the energy she displays as the leader of her kitchen.
