4 cups fresh zucchini, cleaned and cut into large squares

4 cups of water

1 cup pearl onion cut into large squares

1 teaspoon herb seasoning (use your favorite)

Salt and pepper to taste

Preparation

1. In a pot put the cut zucchini with the water, pearl onion, seasoning and a touch of salt and pepper. Cook for about 25 to 30 minutes.

2. Blend the cream and put it back in the pot. Check for flavor and serve piping hot.

Note. Makes approximately 4 servings.

Note 2. If you want to replace the legume, use the same amount: 4 cups of squash or broccoli.
