The most profitable version of the Olivier salad is one prepared at home according to a Soviet recipe. Chef Vladimir Pavlov announced this to Sputnik radio.
“The most inexpensive Olivier at the moment is our old Soviet recipe: with sausage instead of meat. Take potatoes, carrots, pickles, onions, add mayonnaise, which is better to make yourself so that it is more tender. It is better to choose canned peas, because frozen peas are more expensive. Add a boiled egg, a little greens – that’s the whole Olivier, ”recalled Vladimir Pavlov.
Another option to save on Olivier is to make the salad vegetarian. But then you shouldn’t add soy products to it instead of meat, because they are not cheap at all, the chef noted.
“Someone likes Olivier with meat, there is Olivier with chicken thigh or fillet. Someone does not eat meat and replaces it with fish. Some people make a salad with yogurt and sour cream so that it is not greasy, ”the expert noted.
He also said that the salad will be tastier if the vegetables are not boiled, but baked.
