Mayonnaise, a favorite sauce of many Russians, will not harm your health if consumed in moderation. Anna Melekhina, a nutritionist, director of the Dietetics Center, spoke about this in an interview with Radio Sputnik.

At the same time, dishes are often seasoned with mayonnaise, which in themselves are quite satisfying – these are Olivier, Mimosa, herring under a fur coat. “Salads are perceived by us as an appetizer followed by the main course. However, for example, “Olivier” is already a main dish in terms of composition and calorie content. If in an amicable way, then it would be better to add something vegetable rather than meat to this salad. Mayonnaise makes the already nourishing salads even more nutritious. She advised to resort to little tricks, so as not to give up mayonnaise completely, but to reduce the calorie content of this sauce. “There is no need to condemn mayonnaise indiscriminately. If you want to reduce the calorie content of the sauce, you can mix it either with Greek yogurt in a 50/50 ratio, or with low-fat sour cream (10-15%). If you like the taste of mayonnaise, you can combine it with lemon juice, ketchup and other sauces, which will create a brighter bouquet of flavors and, importantly, reduce its calorie content, even if only slightly, ”the nutritionist recommends.
However, she warned, there are people who should still give up mayonnaise. “If after eating a portion of salad with mayonnaise, you feel heaviness (in the stomach – ed.), Your health worsened, pains appeared, then, of course, it is better to limit the use of sauce. Definitely, with an exacerbation of gastritis or pancreatitis, it is better not to use it. If there is an allergic reaction to eggs and mustard, which are common allergens, then mayonnaise is definitely not allowed, ”the doctor emphasized.
Moreover, she believes, you shouldn’t expect home-made mayonnaise to be better than the one bought in the store. It’s all about the composition of the sauce. “As for homemade mayonnaise, you should understand that it seems to be prepared from the same products as in production. However, there is a difference: raw eggs are used at home. It is not safe! If you still want to make the sauce at home, it is better to use boiled yolks, ”the expert summed up.
We also add that the fat content in standard mayonnaise is 67%, and, for example, in vegetable oil it is 99%. In terms of calorie content, the sauce is also inferior to butter: approximately 600 kcal versus 900 kcal in 100 grams of product.
