Experts have found that fried foods have a detrimental effect on the body, because the frying process changes the composition of the food and causes the release of dangerous chemicals. Among them is acrylamide, which is formed when foods containing carbohydrates, such as potatoes, are fried. It turned out that acrylamide is highly likely to cause the development of neurological disorders, obesity, metabolic syndrome, cardiovascular diseases and depression.
To support their arguments, scientists cite the results of a study – they analyzed health data and dietary habits of 140,728 people from a British biological sample repository. It turned out that people who regularly eat fried foods are prone to mental disorders. It turned out that such food increases the risk of anxiety by 12%, and depression by 7%. At the same time, fried potatoes, when consumed regularly, increases the likelihood of developing such conditions by 4% and 2%.
