“Vitamins in the peel”: vegetables and fruits that are best not peeled are listed

Some vegetables and fruits should not be peeled, so as not to deprive yourself of the vitamins and microelements contained in the peel. Nutrition experts spoke about this, writes the Taste of Home portal.

So, they advise eating young potatoes along with the peel, explaining that the peel contains half of the dietary fiber and fiber. It is also better not to peel the kiwi, as it contains a lot of vitamins, just like the peel of apples – it contains insoluble fiber, vitamins A and C, and a flavonoid with antioxidant effects – quercetin. Moreover, apple peels, thanks to unique compounds, help the body remove toxins faster.

Cucumbers are also included in the list – they should not be peeled either, so as not to lose fiber, thanks to which the vegetable is digested for several hours and keeps you full for a long time, and microelements, which help reduce cholesterol and improve the functioning of the heart muscle.

Experts also called tomato skin useful – it contains vitamin C and the antioxidant lycopene, which relieves inflammation and reduces the risk of disease, and eggplant peel, which is rich in microelements that lower cholesterol, prevent the development of inflammation in the body and rejuvenate. Finally, there is no need to peel the pumpkin either – its crust contains zinc.
