From saturated fat content to high salt levels, the main reason why a burger can be unhealthy is due to trimethylamine N-oxide (TMAO), he says. The carnitine in meat is converted by our gut bacteria into trimethylamine. Trimethylamine is oxidized by our liver to TMAO, which can then contribute to heart attacks, strokes and death, the expert explained, adding that any type of processed meat such as ham, bacon, sausages, salami and sliced turkey and chicken would not be the healthiest lunch.
Scientists also conducted studies in which more than 1.4 million people became participants. After analyzing data over a 30-year period, experts concluded that every 50 grams per day of higher consumption of processed meat increases the risk of coronary heart disease by 18%.
“The vast majority of available evidence supports a protective association between fruit and vegetable consumption and stroke risk,” he said.
