Mondel’s Andean blue cheese has managed to rank among the best in the world, obtaining a bronze medal at the World Cheese Award, held in Spain.
Each achievement of our gastronomy is a joy for all of us who are part of it. And not only because of our extraordinary traditional cuisine or that obtained by our chefs in new proposals, but also to the products that we make in our country beyond those that are traditionally known in the world, since we also have a range of very high products quality, sometimes ignored by our own consumers.
This is the case of the Andean blue cheese of Mondel, a cheese company that has been producing high quality cheeses for 25 years, from its farm in the province of Carchi, at 3,200 meters above sea level, where the grass that grows different from the plain, the Andean climate, plus the care they take with their livestock is what surely gives a particular flavor to the milk with which their products are made.
This week we received the pleasant news that our Andean blue cheese has managed to rank among the best in the world, obtaining a bronze medal at the World Cheese Award, recently held in Spain. Congratulations to our friend Jaime Erazo for raising the value of our non-traditional products and giving us the joy and pride of being able to have one of the best cheeses in the world in our country. In his honor, today we make a recipe with his Andean blue cheese.
Focaccia with Andean blue cheese
Ingredients:
• 1 kilogram of flour
• 2 eggs
• 30 grams of yeast
• 20 grams of salt
• 40 grams of sugar
• 150 grams of olive oil
• 550 grams of water
• 300 grams of Andean blue cheese
• 100 grams of mozzarella cheese
• Fresh basil and rosemary
Elaboration:
1. Mix the flour, water, yeast, salt and sugar in a bowl or blender with a hook.
2. We beat until everything is mixed and we add the eggs one by one.
3. Add the olive oil, mix well and let it rest for 30 minutes.
4. We place the extended dough on a tray greased with oil and let it rest for 60 more minutes; We spread with our fingers to contain the oil and add blue cheese in small pieces and grated mozzarella cheese.
5. We add basil and fresh rosemary.
6. Bake 25 minutes at 170 degrees. (I)
