Dear readers, first of all: Happy Father’s Day! on this very special Sunday. And second, I want to thank Dr. Luis Arriaga Mosquera, my son-in-law’s grandfather, who gave us this delicious recipe he wrote to celebrate with the family. The truth is, I have prepared it several times and believe me it is wonderful. Prepare it right now and it will be the star at lunch. You can not miss it!

Ingredients
Dough:
- 1 cup of crushed Maria biscuits
- 1 spoon of sugar
- 1 tablespoon melted butter
- 3 cups of cream cheese
- ½ cup of white sugar
- ½ cup of milk
- 4 eggs
- 1 cup sour cream
- ¼ cup flour
- 1 teaspoon lemon zest
- 1 cup of strawberry or blackberry jam
- 10 fresh strawberries to decorate
Preparation:
- In a food processor, crush the biscuits. Put them in a mold and mix with the tablespoon of sugar and the melted butter.
- Preferably in a pop-out pan, arrange the biscuit to make a crust and flatten it to make it level throughout the pan. Place the mold for 30 minutes in the refrigerator.
- Prepare the cheesecake filling. In a large bowl, place the cream cheese with the sugar and milk; beat with a hand mixer until cheese is creamy.
- Add the eggs one by one, beating to incorporate well. Add sour cream, flour and lemon zest and beat until smooth.
- Pour this mixture over the cookie and bake at 350ºF or 175ºC for one hour. Remove it from the oven and let it rest until cool.
- Place the cup of jam on top of the cheesecake and carefully spread it out to avoid getting the edges dirty. Garnish with the strawberries and store in the refrigerator until serving time.
