Manaba Style Stuffed Avocado Recipe

Manaba style stuffed avocado

Ingredients:

  • ½ cup diced red onion
  • ½ cup tomato, peeled and diced
  • 1 teaspoon achiote oil
  • 1 cup of meat cooked and chopped into small squares
  • 1 tablespoon peanut paste
  • ½ cup of water
  • ½ teaspoon of salt
  • 1 pinch of pepper
  • 2 hard boiled eggs chopped
  • 1 teaspoon chopped fresh coriander
  • 2 ripe avocados
  • 1 lemon
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup of white sauce
  • 1 tablespoon of brown salt

White sauce

  • 1 cup of milk
  • 1 tablespoon cornstarch
  • 1 teaspoon of butter
  • Salt and pepper to taste

Preparation:

  1. In a frying pan put the red onion with the tomato and the achiote oil. Cook for a little while so that it becomes like a rehash.
  2. Add the meat, peanut paste, water, salt and pepper and mix well to blend the flavors.
  3. Add the chopped hard-boiled eggs and chopped fresh coriander. Check the flavor and have it ready.
  4. Cut the avocados in half and remove the skin. Arrange them on a plate and sprinkle over them with the lemon juice, a touch of salt and pepper and the olive oil.
  5. Prepare the white sauce by putting the cold milk with the melted cornstarch in a small pot, bring it to the fire and when it comes to a boil, add the butter, salt and pepper to taste. Check the taste.
  6. Fill the avocados with the meat filling, pour about two tablespoons of white sauce on top of each avocado and decorate with the brown salt on top.

Note: Makes 2 servings. You can double or triple the recipe.
