A tribute to the gastronomic heritage of the Puerto Principal. Rediscovering the culinary essence that has merged with the different cultures that settled in the city and that today are part of Guayaquil’s identity is the self-imposed goal of the gastronomic festival year after year. The event, organized by Unicafe at Unipark Hotelreturns after a two-year hiatus due to the pandemic to celebrate its 25th anniversary.
“This year we have prepared a special edition precisely for the 25th anniversary of the festival. Within the appointment we rescue the traditional recipes, those typical preparations of the Guayaquil gastronomy and will be present in this season of celebrations of Guayaquil. We will have a wide variety of dishes such as corn sango with shrimp, casseroles, dried, guatita, crab shells, crab shells au gratin, ball broth, fish suckling, there are ample options to taste”, indicates César Maldonado, executive chef of the Unipark hotel.

From Monday to Sunday, diners will be able to find a la carte dishes that range from $5 to $16 (plus taxes), to enjoy entrees such as hayacas, humitas, bolones, crab nails, cebiches and soups; main dishes that consist of flag, dried chicken, dry goat, guatita, Creole rice, churrasco, sango, crabs, casserole, among others. And for confectioners, dessert options such as corn soufflé, crispy figs, rice pudding, passion fruit cake with coconut biscuit and chocolate cake with pechiche.
“All of this will be available in our daily buffet service and apart from that we will have a menu of representative dishes such as the Guayaquil flag, guatita, crab shells, all the traditional recipes, very typical of our gastronomy and we are also rescuing the Founder cart that It is where food was previously sold on the corners of the boardwalk and now we are going to have it in the cafeteria with the aplanchados, quesadillas and sweets, from 4:00 p.m. to 8:00 p.m., like Guayaquil afternoons, ”he adds.

During the mornings, visitors can enjoy the buffet breakfast with typical Guayaquil delicacies for $14 (plus tax). In turn, in the afternoons they will be delighted with the buffet lunch that includes appetizers, desserts and a main course of their choice for a value of $21 (plus taxes). On weekends, buffet lunch will also be served.
The La Fundadora cart service (for $8 plus taxes) includes hot chocolate, pressed sandwich, morocho, figs with cheese, quesadillas and sweet bread.
