La Chingada, a new space for traditional Mexican food in Guayaquil

Gastronomy allows us to get to know different cultures through their flavours, ingredients and history. Mexican food, declared intangible cultural heritage of humanity by UNESCO in 2010, continues to expand its offer in the world, including Guayaquil, where spaces that specialize in its preparations are in increasing demand.

In it Plaza Orellana shopping center (on Francisco de Orellana avenue, in the north of Guayaquil) the restaurant opened its doors The Chingada, enterprise that not only bets on the gastronomic line, but also aspires to become a new meeting point for music and live shows.

Patrick Mosquera is the person in charge of this restaurant. Although the place is new, it is not the first time that he is in charge of a gastronomic establishment.

“Before opening this place, we had Paradero Rústico (another of his ventures), but the pandemic knocked it down and I started looking for strategies. I did a market study and, among the inquiries we made, we investigated what was needed in this area and that, in the same place, it has everything. So, we proposed a Mexican food restaurant. In the eight-month journey, which was the time it took for this restaurant to open, we did not want to be the typical Mexican food restaurant that already existed. So, we decided to implement a space for live presentations and good signature cocktails”, Mosquera details.

Mosquera started seven years ago in the field of gastronomic entrepreneurship. One of their current offerings is crabs and seafood at Paradero Rústico (Puerto Santa Ana).

At La Chingada, Paúl Gavilánez is the chef in charge of the kitchen. On its menu, with more than 30 dishes, you will find guacamole with tortilla chips, corn on the cob, melted cheese, Mexican cup, quesadillas (chicken, cheese and loin), flautas (chingada, chicken and loin), popcorn shrimp, chilaquiles, cocktail shrimp, salads, soups (aguachile, bean tortillas), sooty breast, calaverón loin, deviled lobster with shrimp, vegetarian casserole, northern loin, Aztec loin, Mexican bowl.

In its menu there are also tacos (chicken, pork, loin, mixed, from the shepherd, from the house scrambled), burritos (with the same variety of tacos), pibil pig, sopes, enchiladas (tomato, in mole sauce , enfrijolada), fajitas, wires and desserts (fried ice cream, churros).

Mosquera affirms that the recommended preparations of the house are the La Chingada burrito (which comes with refried beans, tenderloin, chicken, chistorra sausage, bacon, guacamole, pico de gallo, cheese sauce and Mexican rice) and shrimp popcorn.

According to Mosquera, the local offer includes shows from drags (Saturdays), DJ (Friday) and live music (Thursday); It also plans to present shows by guest artists. The establishment has capacity for 100 or up to 150 people.

Attention to the public, from Monday to Thursday, is from 12:00 to 00:00; Friday and Saturday, from 12:00 to 02:00; and Sundays until 8:00 p.m. (I)
