Fanesca, the Easter dish: these are the essential ingredients

Fanesca can be a very elaborate dish that can become a difficult task to perform, not only because of the complexity of making it, but also because of the number of ingredients it includes.

Among the important ingredients of this soup are different types of beans, the custom is to prepare them with dry grains (beans and chickpeas), but it can also be prepared using tender grains, such as peas and tender beans.

What ingredients does the fanesca have?

  • 8 branches of white onion
  • 1 cup of cooked lentils
  • 1 cup of cooked young beans
  • 1 cup cooked shelled beans
  • 1 cup of cooked mote
  • 1 cup of chops
  • 5 pieces of corn
  • 1 cup of chopped pumpkin
  • 1 cup of chopped sambo
  • 1 cup of vegetables
  • 2 pounds of cod
  • 1/2 cup ground peanuts
  • 3 cups of milk
  • 3 teaspoons of oregano and mint
  • Garlic, salt, achiote

Preparation:

  • All grains can be cooked separately. Keep a little water where the grains are cooking. Reserve.
  • A rehash is made with the onion, garlic, cumin and achiote. We incorporate the squash, the sambo cut into small squares, and let it cook until we see that the squash and sambo begin to turn into mush.
  • We add the different previously cooked grains (beans, lentils, chickpeas, mote, corn chocho. Add the oregano and mint. Let cook for about 15 minutes.
  • Blend the milk with the peanut and add it to the preparation.
  • The cod should be soaked in hot water for about 2 hours to help remove excess salt.
  • Cook the cod with a few slices of onion and 1 tablespoon of garlic. When cool, crumble and remove the bones.
  • In another refried white onion with achiote, a part of the peanuts is cooked with 1 cup of milk. In that peanut sauce, the shredded cod is added and reserved to add it when serving the fanesca.
  • Once its flavors have been incorporated, there are versions in which you can add some cream and grated cheese.
  • To serve, it is accompanied with empanaditas de viento, slices of hard-boiled egg and slices of fried sweet plantain. (I)
