Marsia Taha Mohammedaward-winning female revelation chef of the awards Latin American 50 Best Restaurants, is in Ecuador to present his cuisine this Monday, February 14, for the Valentine’s Day, at the Somos Ecuador restaurant, in Quito.
This event will merge traditional Bolivian cuisine, based on products from the jungle and mountains of that country, with the gastronomic proposal of Alejandra Espinoza, chef of Somos Ecuador.
Taha leads the kitchen of the Gustu restaurant, in La Paz, Bolivia; the work she performed there has made her known throughout Latin America. Gustu ranks 36th on the list of the 50 Best Restaurants in Latin America.
He is an enthusiast of biodiversity and part of the group of chefs and scientists Wild Flavorswho seek “a deep understanding of the natural pantry and food culture of Bolivia.”
In this way, it makes known natural products such as palo yemada (Bredemeyera floribunda), a widely consumed root in the department of Beni, which has medicinal and culinary uses. Due to its saponin content, a product similar to a meringue is obtained from it, and “the possibility of generating an aerated structure makes this product an incredible vegan substitute for eggs,” explains Taha.
The representatives of both Ecuador and Bolivia will share their knowledge, technique, ancestral knowledge and ingredients to offer a unique dinner. In addition, it will be a night to promote local Ecuadorian products, with brands such as República del Cacao, Casa Agave and Two Hemispheres (wines).
