The broth is undoubtedly the king of Polish soups, a compulsory image during a traditional, Sunday dinner. Properly fat, cooked on several types of meat, with the addition of Italian, spices and of course pasta. Meanwhile, it turns out that in the old recipes you will not find an egg-lived product. How was this timeless soup served then?
What to add to the broth to make it delicious? Unusual recipe
Although broth is a traditional soup that guests on Polish tables, the way it is prepared, may vary depending on the region or even the customs prevailing in the family. Here and there it is added to the decoction, and instead of pasta serves potatoes. Also more original ingredients were used over 100 years ago. According to the recipe in the chef’s book “Polish-American cuisine. The only appropriate cookbook for Polish housewives in America” by AJ Kamionka published in 1917, to which the portal reached the portal Przyljprzepis.pl, a strong, beef broth can be served with poultry meatballs, peas and rice.
The dish was called the Orlean broth. How to prepare it? You need:
- previously prepared, traditional broth, preferably beef (approx. 2 liters),
- 190 g of rice,
- 140 g of frozen peas,
- a tablespoon of butter,
- water for cooking rice and meat,
For meatballs:
- 200 g of poultry meat,
- Kajzerka roll,
- 2 yolks,
- spices, i.e. salt, pepper and nutmeg,
- 250 ml of water.
How to make Orleans broth? Prepare additional ingredients
Start preparing the old broth by cooking rice. Do it according to the instructions on the packaging. Caiser in 250 ml of water to soak. Just 5-10 minutes. What next?
- For poultry meat Add spices, yolks, soaked roll, mix thoroughly so that a homogeneous mass is formed. For cooking, set a pot with salted water.
- Form the meatballs from the chicken mass or, as in the recipe, oval “noodles”.
- Put the ready meat into the water and boil for another 5 minutes. Then remove.
- Start heating the broth.
- In the meantime, strain rice, wait until it cools down a bit. When this happens, fry it gently in butter, thanks to which it will remain sleepy.
- Gently put the meatballs and frozen peas into the garage with broth. Cook for 8-10 minutes.
- Put the rice on deep plates, pour a portion of hot soup with toppings. Enjoy your meal!
