In this recipe, not only yeast is crucial. It is also important to separate proteins from yolks and compact them to a stiff foam – it is this trick that will give the pancakes fluffiness. In addition, to make them delicate, combine the ingredients, avoiding too intense mixing. Otherwise, the dough will become hard.

Ingredients:

  • approx. 350 g of flour,
  • 4 medium -sized,
  • 400 ml of milk,
  • 4 eggs,
  • 25 g of fresh yeast,
  • 4 teaspoons of sugar,
  • a spoon of vinegar,
  • a pinch of salt,
  • Frying oil.

Preparation method:

  1. Start by separating the proteins from the yolks. Place them in two separate dishes.
  2. In warm milk, dissolve the yeast with a teaspoon of sugar and set aside for about 10 minutes. Then add the mixture to the yolks and mix thoroughly. Pour the flour, the remaining sugar and a pinch of salt and combine until you get a smooth consistency. Finally pour vinegar.
  3. Peel the apples, remove the seed nests and grate on a large grater. You can also cut them into thin slices if you prefer larger pieces of fruit.
