Have you ever wondered what color eggs are the healthiest? It turns out that each country has its own predispositions regarding what the shell should look like. We know the impact it has on the nutrients in our food.

Eggs are a rich source of nutrients, containing a high content of protein, vitamins (such as A, B, D, E, K) and minerals such as iron, zinc and phosphorus. Additionally, they are a source of omega-3 polyunsaturated fatty acids, which support the health of the heart and circulatory system. Some people believe that the color of the shell influences what is inside, but is it true? We are checking.

Shell color does not affect nor on health properties. Both white, brown, green and blue eggs can be equally healthy and nutritionally valuable. What matters is how how the chickens are raised and the diet they receive. The color of the shell itself depends on genes. Or more precisely, the species. Brown eggs are laid by, for example, Rhode Island Red or Plymouth Rock. There is a common myth in Poland that a brown egg is natural, healthier and full of nutritional value, which is why it is most often chosen when shopping. It’s similar in Singapore.

Which hen lays white eggs? Customers from different countries have different predispositions

White eggs are highly valued by Americans. They believe that these are safe because any dirt is visible on them. Additionally, many eggs sold in supermarkets in the United States come from Leghorn hens, which typically lay white eggs. That’s why this color is simply more common and easier to obtain than brown eggs.

What color eggs are the healthiest? The green and blue ones are worth trying

In addition to white and brown eggs, we can also find green and blue ones. They come from chicken breeds such as Araucana, American Wyandotte or Easter Egger. They have a gene that causes a dye called oocyanin to be applied to the eggshell, turning it green or blue.

However, few people know that green-legged partridge hen is a traditional Polish breed of chickens, threatened with extinction and laying greenish or blue eggs. Its eggs are considered one of the healthiest. They contain all exogenous amino acids. They are also characterized by a 30% lower total cholesterol level, a 14% lower LDL content, i.e. “bad cholesterol”, and a 12% higher HDL content, i.e. “good cholesterol”.

They are a rich source of phosvitin, thanks to which they inhibit oxidation processes, lecithin, and prevent cell aging. And above all, they are a rich source of lysozyme, which has anti-inflammatory properties.
