Just place the chicken breast for dinner in a dish or bag, add the previously prepared marinade, close it and set aside for at least 15 minutes. and preferably an hour. If you have time, marinate the meat and leave it in the fridge overnight.
In addition to the marinade, the time and appropriate method of frying or baking are also important. This will make a quick chicken dinner perfect. What to look for? The meat cannot be cold, i.e. freshly taken out of the refrigerator. It should be at room temperature. The pan and oven should also be preheated. How to bake chicken breast so that it is not dry? Preheat the oven to 180 degrees Celsius, place the breast in an ovenproof dish and cover with aluminum foil, a lid or wrap it in a baking sleeve, depending on the temperature. - 2-3 chicken breasts,
- 200 g mushrooms,
- 200 g of yellow cheese or mozzarella,
- 1 onion,
- 1 medium carrot,
- 4 cloves of garlic,
- 1-2 tablespoons of mayonnaise,
- spices: one teaspoon each of sweet pepper, hot pepper, basil, thyme and oregano,
- 2 tablespoons of rapeseed oil or olive oil,
- 1 tablespoon of butter,
- salt and pepper – to taste.
Preparation:
- Divide the chicken breast into equal parts, one portion at a time. Remove cartilage and membranes if necessary. Put it in a ziplock bag or container. Add hot and sweet peppers, a bit of salt and pepper, pressed garlic and oil or olive oil. Close the bag and “massage” the meat to distribute the marinade thoroughly. Set aside for about an hour, preferably overnight, in the refrigerator.
- Cut the mushrooms into thin slices, cut the carrots and onion into cubes. Heat the butter in a pan, fry the mushrooms until golden.
- Preheat the oven to 200 degrees.
- Remove the mushrooms from the pan, add butter if necessary and fry the onion and carrot. After a while, add the mushrooms, season with salt and pepper and simmer covered for a few minutes.
- Place the chicken removed from the marinade (at room temperature) in an ovenproof dish. Cover and put in the oven for about 10 minutes.
- Remove from the oven and spread a little mayonnaise on each breast. Place the stewed vegetables on top, sprinkle with herbs and cheese. Do not cover the dish.
- Put them back in the oven and bake for about 20 minutes until the cheese melts and turns golden.
