As a result of fermentation and decomposition of sugars by bacteria, lactic acid is produced. It is what gives cabbage its specific taste and smell. Thanks to the entire process, the product is shelf-stable for a long time. Fermentation takes time, so you have to wait about two weeks for sauerkraut.

Sauerkraut looks very similar to sauerkraut. However, it has a different taste because it is prepared in a different way. It is not pickled, but covered with vinegar, spices and sugar. In this case, there is no fermentation process, so sauerkraut does not need several days to acquire good taste and appearance. Immediately after pouring the vinegar mixture over it, you can put it into containers or bags. However, it has a drawback: it is not as healthy as sauerkraut. The lack of fermentation results in the lack of probiotics found in sauerkraut.
