What is the healthiest fat for frying? A dietitian on what to avoid
Dr. Michał Wrzosek, a dietitian known from TikTok and Instagram, spoke on the matter. He believes that we should not fry in either lard or butter because oxidized cholesterol is dangerous to health. Coconut oil is also a good choice.
If we want to fry with butter, it is better to choose clarified butter, because its smoke point is about 200 degrees Celsius (the smoke point of unclarified butter is about 120 degrees Celsius). And what about rapeseed oil, which is popular in Polish homes?

Rapeseed oil is one of the most frequently recommended fats for frying and, next to clarified butter, it is most often used. Experts argue that we can successfully fry food in it because it has a high smoke point and is additionally rich in omega-6 and omega-3 fatty acids. — There is a difference between cold-pressed rapeseed oil and refined rapeseed oil. We use the refined one for long frying, while the cold pressed one can only be used for short frying – explained Katarzyna Bosacka in “”. Both fats are recommended for frying. However, remember that if you are preparing to fry for a long time, e.g. in deep fat, it is better to choose clarified butter or refined oil.
